Following tradition, the core producing region of Longjing in Xihu is divided into five areas that correspond to the mountains: Shi (Lion), Long (Dragon), Yun (Cloud), Hu (Tiger), Mei (Mume). Our Longjing is from Baihefeng, or “White Crane Peak,” which belongs to the Long (Dragon) subdivision of the region, 6 km southwest of Xihu West Lake.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003e\u003c\/p\u003e\n\u003cdiv style=\"text-align: left;\"\u003e\u003cimg style=\"float: none;\" alt=\"\" src=\"https:\/\/cdn.shopify.com\/s\/files\/1\/0091\/5737\/8153\/files\/Dragonwellmap-beige.png?v=1587076960\"\u003e\u003c\/div\u003e\n\u003cp\u003eThe uniqueness of Longjing from Baihefeng is a result of both the soil and cultivar of the tea plants. The soil on Baihefeng is unique: a white, sandy soil composed mostly of pebble-sized fragments of white quartzite, which has been weathered and eroded. Thus, it is very rich in the minerals that are absorbed by the roots of the tea plants. \u003c\/p\u003e\n\u003cp\u003eThe cultivar is an indigenous varietal called Quntizhong. This is an inherited cultivar, more traditional than the commonly used, Longjing 43. Quntizhong dates back more than 1000 years ago, to the Qing Dynasty, meaning this tea tastes very much like old-style Longjing that ancestors would have enjoyed.\u003c\/p\u003e\n\u003cp\u003eOur Dragonwell is crafted by the one and only tea master, Tang Xiaojun. Tang is famous for crafting the finest and most historically accurate Dragonwell entirely by hand. Each year, he makes a very limited quantity of handcrafted Dragonwell for sale. \u003c\/p\u003e\n\u003cp\u003eThe leaves for this tea were picked on April 9, 2025, as the colder than usual temperatures this year delayed tea harvest from high elevation farms by roughly 2 weeks. Each experienced tea picker is only able to pick around 1000g of fresh leaves each day on account of the rigorous picking standards. Once harvested, the fresh leaves are set out on a bamboo mat and withered for 4-8 hours, depending on the temperature, humidity, and the amount of sunlight each day. The leaves are then pan fried in small batches for two rounds. \u003c\/p\u003e\n\u003cp\u003eThe first round, known as the “kill-green” process, usually lasts for 10 minutes, and is used to hand-shape and flatten the leaves. The second round lasts around 30 minutes, during which the experience of the tea maker is crucial, as a series of different gestures and movements are required throughout this process - shaking, pushing, holding, pressing and rubbing - all while the pan is at an extremely high temperature of 300°C. This technique takes years of experience to perfect, and when mastered, ensures the finished tea has a better aroma and less astringency. \u003c\/p\u003e\n\u003cp\u003eAfter pan frying, the leaves are aged with limestone in a large earthenware vessel for 5 days. This is an important step in making traditional Longjing, as the limestone helps absorb any remaining moisture in the leaves without absorbing the tea’s aroma with it. \u003c\/p\u003e\n\u003cp\u003eYou will notice right away that Dragonwell tea leaves appear flat and broad. This is from the hand shaping that happens in the pan frying stages. They pile on top of one another in the gaiwan like narrow sheets of paper, and open quickly as soon as they meet water, becoming vibrant and dimensional, like images in a picture book. \u003c\/p\u003e\n\u003cp\u003eTheir liquor looks like melted quartz or glacier run off: a clear, icey green that reminds us of the mountain lake around which these tea leaves grew. It has a soft, delicate mouthfeel that increases in density and unity through infusions. In terms of tasting notes, its elegance is in its quietness, but we do get distinct hints of jungle flowers, orchids, and water plants. In light of this tea’s gentleness on the palate one would not expect it to deliver the amount of energy that it does. Its energy builds slowly and gently in the core of us as we drink it through infusions. Its champagne colour liquor has a rich, nutty aroma and an oceanic, umami forward taste. On the finish we find a light, uplifting astringency with a honeyed cereal undertone. The balancing act this tea performs gives this harvest a very satisfying fullness. It will be enjoyed by those who like a stronger tasting green tea that isn’t too cooling. \u003c\/p\u003e\n\u003cp style=\"text-align: center;\"\u003e\u003cstrong\u003e. . .\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eMr. Tang’s family are generational tea farmers in Laoshan Mountain of Qingdao, Shandong. Shandong is located in Northeastern China. It is named after Mount Lao, a magnificent mountain range recognized by its striking, slim, elongated cliffs. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eThe many small plots that make up Mr. Tang’s tea farm are scattered along this coastline, at the foot of Mount Lao. Some are distributed right along the beaches, exposed to the salty wind that blows off of the water, while others are tucked slightly up into the forested hills, protected by the pine trees and the mountain behind them. There is a great peace that settles over this area of Laoshan. The tranquility of Mr. Tang’s tea farm is resounding, and extends between its many parts. Following a path that connects the plots next to the ocean to the ones tucked away in the forest, the sound of the waves progressively gives way to the sound of forest birds and running springs and the scent of the ocean turns into the scent of red pines and green plum. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eLaoshan is a very unique tea producing area in China. It is as far North as a tea region can be, and at the highest latitude before temperatures become too cold for tea trees to survive. The small farms in Laoshan have Mount Lao on one side, and are otherwise surrounded by ocean. The air is very humid, and it sees longer winters with more frost and snow than tea regions further South. Another special feature of Laoshan is that the water which irrigates the tea trees comes from natural springs that run through Mount Lao. This water is very pure and high in the minerals it collects from the cliffs of the mountain. It is no wonder we find that teas from Laoshan have such a distinct taste when compared with teas from Southern China. The mountain minerals and the constriction that comes with cooler temperatures give these teas a great richness, and the wet air coming off of the ocean has imparted umami and an unmistakable saline taste to them. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eBecause of the colder climate, the first harvest of Laoshan green tea is almost a month later than the first harvest of green teas from tea regions in Southern China. When the time comes, the leaves are hand harvested by Mr. Tang’s mother and grandmother, from their tea gardens that are scattered between Mount Lao and the Yellow Sea. In 2009, while he was tracking boars in the mountains, he stumbled into an area dense with wild, abandoned tea trees. He was taken aback by the beauty of this discovery: to see so many tea trees, thriving on their own, at home in the ancient forest. And so began his path as a tea forager and producer.  \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eFor many reasons, Mr. Fan is a unique tea artisan. Firstly, he does not own any land himself, and he does not have a tea farm. He focuses on crafting tea from wild and semi-wild abandoned tea trees in the mountains, and his wealth is only his understanding of their location and their rhythms. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eThis tea is made from tea trees that were planted by tea farmers in the 1970’s, and then abandoned as people left the villages for coastal cities. They are of the traditional Zhenghe Dabai (Big White) 政和大白 varietal, situated within thousands of acres of old growth forest, more than 3600 feet above sea level. They grew from seeds that were washed downstream from a river that runs through the middle of the forest. In these vast, old growth forests, the wild tea trees compete with a variety of other types of trees, all seeking precious, diffused sunlight. Thus, the roots of the tea trees extend deep into the earth to draw nutrients, and they grow slowly, accumulating these rich nutrients and compounds in their leaves. We feel this richness in the tea they yield. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eMr. Fan crafts his white teas traditionally: the leaves are naturally withered and dried by sunlight, a slow and delicate process that takes between 48 and 60 hours. However simple it may sound, this method requires painstaking care and attention, along with a great deal of experience to do well. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eThe leaves must be picked early in the morning and carefully carried down the mountain in bamboo baskets to ensure that the leaves stay intact and are not damaged as they are handled. The fresh leaves are swiftly and carefully spread out on bamboo mats, starting the process of withering. They are first withered in the sun, and their moisture level is monitored closely. When the moisture level is at 40-50% the leaves are moved indoors. Finally, when the moisture level reaches 10-20%, the leaves are gently roasted over charcoal at a very low temperature. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eThis Semi Wild Shoumei consists of one-bud-three-leaves. It is a very gentle and balancing tea that opens quickly in the glass. In one of these chats an old friend, Li, suggested that Tang grow tea in Li’s hometown, Yangta Village. That July the two of them traveled to Jinggu in Yangta and leased 11 acres of forested area from Li’s niece. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\"\u003eThe area Tang and Li leased was wild growth, situated at about 6500 ft elevation. On this land they planted 70,000 Jinggu Big White tea trees; an indigenous varietal of white tea unique to this area. (There are still a few ancient examples of them, some over 400 years old, in and around Yangta village). Having never made tea before, Tang read and researched as he went – learning by way of experience and reference texts in equal measure. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\"\u003eOnly 30,000 of the initial 70,000 Jinggu Big White trees Tang and Li planted survived. Tang found out, somewhat far into the process, that there would be no tea to make regardless of how many trees made it, as one cannot harvest newly planted tea trees until they have stood in the ground for 3 years. And so they waited, and Mr. Tang continued to learn.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\"\u003eDoing some research on historical teas from Yunnan, he learned that, around 800 years ago, there was a Tribute white tea made in Jinggu called “White Dragon Beard” that was very similar to what we know nowadays as Silver Needle. When the Jinggu Big White trees were ready to harvest he was eager to try making white teas like Silver Needle and White Peony from their leaves as was traditionally done, but that, on account of economic pressures, had fallen out of practice. He has since experimented with this to great success. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\"\u003eGreen Peony is made from the First Harvest leaves of the tea trees Mr. Tang and his friend Li planted themselves in 2006, when they started the tea farm. When the conditions are right Mr. Tang is not always able to find enough hands to help him harvest before the leaves go through their next transformation. Green Peony is a spontaneous tea. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\"\u003eWhen it is successfully set into motion, the leaves are picked according to the traditional standards of one bud and one leaf. Mr. Tang then spreads the fresh leaves out on bamboo trays and takes them indoors where they gradually oxidize for around sixty hours. Once the leaves reach 20% moisture content they are taken to a glass house that Mr. Tang built for sun-drying. The tea is left there for a few hours each day in the morning, before the sunlight is too strong. For centuries, Zhenghe white tea has been processed by way of  阴干, or shade drying. The foraged tea leaves are spread out on bamboo mats and are attentively dried in the shade. It is not common for a tea to be made without any exposure to sun, fans, heat, or mechanical roasting, and the result this has on its quality is significant. Essentially, shade dried tea leaves are still “alive,” and retain the most live enzymes and nutrients as possible. This method of presenting tea is laborious, time-consuming, and requires a substantial amount of space – it is no wonder it is so uncommon.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eThis patient method results in a tea that is as nourishing as it is enjoyable. The fresh leaves are swiftly and carefully spread out on bamboo mats, starting the process of withering. They are first withered in the sun, and their moisture level is monitored closely. When the moisture level is at 40-50% the leaves are moved indoors. Finally, when the moisture level reaches 10-20%, the leaves are gently roasted over charcoal at a very low temperature. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\"\u003eSilver Needle is considered the most precious of all white teas as it is made entirely of the fresh, single buds of the trees. Huangtian is a vital place that maintains many long standing traditions. It is famous for handmade paper and its unique architecture: all of the structures have white, concrete walls and black tiles. It is also famous for the craftsmanship of this particular kind of green tea.\u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eHuangtian and the village Yongxi, on the other side of the mountain, are the birthplace of Huoqing 火青, or \"fire green\" tea. Tea making here began in the 1500's, during the Ming Dynasty and the area is still home to many century-old indigenous tea trees. The soil in this rocky area is particularly dense, giving the tea leaves intense flavour and strong energy. These semi-wild trees thrive on their own, in the valley between two mountains, and are only harvested once a year, in Spring.\u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eIt takes both knowing and endurance to reach the wild tea trees scattered throughout the area. The most remote ones are 20 kilometers from the village, and it requires a 3 hour hike into the mountains to access them. Usually, the elders will trek out in the early morning, bringing lunch with them, and return to the village with freshly harvested tea leaves in the late afternoon. The best tea leaves are the ones further from the village, and that receive less direct sunlight. However, there are less and less people willing to make this trek, which means that the best Huoqing teas are slowly disappearing.\u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eThis profound effort to harvest is matched in the craftsmanship of Huoqing; it is one of the most labour-intensive green teas we are aware of, requiring extreme patience, skill and experience. Crafting Huoqing involves 20 hours of continuous pan-frying over charcoal. Traditionally, making one batch of tea meant dividing the 20 hours of pan frying into three, 7 hour shifts split between three people. This Huoqing is crafted by Mr. Zhu, who is now in his seventies. He has been a tea farmer and a beekeeper all his life.\u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eMr. Zhu began learning how to make tea with local elders when he was 16 years old. As an apprentice to the master craftsmen, he spent 2 years washing the iron woks that were used to pan fry the green tea. Gradually, he learned how to craft Huoqing tea by hand on his own, mastering the subtle motions that transform the fresh leaves into the tightly rolled balls we see in the finished tea. The tea must be continually moved every minute of the 20 hours that it is in the wok, otherwise the leaves burn. Because of how labour intensive it is, Mr. Zhu and his wife only make 50kg of Huoqing green tea each year.\u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eThis tea has a strong presence. After 20 hours of gentle roasting, when it finally comes out of the iron wok, the tea has turned a deep, rich green, with a beautiful oily sheen. In the gaiwan they unfurl quickly into bright, youthful leaves that curve softly in the water. We first taste the warm, metallic \"wok hay,\" followed by the intense greenness of the plant, then the wildness of the forest valley, and finally, its spring flowers.\u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eInflected by the extended, rhythmic pan frying process, this green tea presents with such depth and complexity it feels more like a pu-erh. The varietal was popular for its beautiful leaves and high yield. Back then, most tea farmers either processed the leaves as pu erh and sold them as Mao Cha to bigger pu erh factories, made them into silvery green tea and sold them to Guangxi to be turned into jasmine tea, or made them into golden tips black tea.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eIn this instance Mr. Tang is doing something we have never seen before with Jinggu Big White, and we can consider him a pioneer for dedicating so many years of experimentation to achieving it. They blossom once every year, in November. The delicate flowers used to make this tea come from the same trees grown on Mr. Tang’s farm. They are carefully hand harvested as they bloom, and left to slowly dry in the sun, before being finished over charcoal to remove their remaining moisture; a process that takes over two weeks. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eWe will always be struck by the appearance of this tea cake: the contrast of the burnt-orange flowers pressed into the pale, silver needles. Both the orange of the dried blossom and the liquor it brews is a deeper colour this year. Fuding is flanked by mountains and faces the ocean, therefore the topography is “open” and sees sustained exposure to sun, wind, and rain. Since ancient times, white tea crafted in Fuding has been withered in the high sun and slowly dried  outdoors. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eThis Shoumei is from a tea farm that sits at 3000 ft in elevation. This high up, the trees are covered in mist and fog all year round. After harvest, the tea leaves were withered and dried first outdoors, and then indoors for at least a week.  \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eThe tea leaves are combined with the aged peel (Chen Pi) of red mandarin oranges grown in Xinhui, Guangdong – the most well-known village for producing aged orange peel. Orange peels are revered as both a medicine and a deeply satisfying flavour in China. They must be aged for at least six years before being used in tea; any younger and their moisture and sugar content will cause the tea cake to grow moldy. Once combined with the tea leaves, they are pressed together into small, cookie shaped cakes. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eNaturally aged Shoumei tends to have a subtle aftertaste of aged orange peel on its own. When dried, these pale, uniform leaves lay very flat like pine needles. Distinct to them is a dark, green vein which runs down the spine of each leaf, with fine arteries branching off of it. He was a gifted poet, painter, calligrapher, and very engaged with the tradition of tea. In 1107 Huizong authored a treatise on tea called \u003cem\u003eDaguan Chalun\u003c\/em\u003e. In it, he describes Baicha tea at length; he believed it to be very special amongst teas for its pale, delicate appearance, and noted that it grew sporadically on cliffs, therefore resisted being domesticated by man. He crafted this white tea for the first time in 2023, after his annual foraging trip, making something we rarely ever see from the leaves of ancient pu’erh trees.  Each year he will only produce less than 10 kilograms of this tea. \u2028\u003c\/p\u003e\n\u003cp\u003eAt 8200 feet elevation, the jungle terrain where these wild pu’erh trees stand is extremely steep, and a ways away from the nearest village. The trees have grown wild since they were planted by the ancestors of local, indigenous tribes over a thousand years ago. Unlike cultivated tea trees, wild trees only sprout once each spring, making their single bursts of life particularly precious. These leaves are in good hands with Mr. Tang, who has been crafting white tea for over 3 decades, and who understands it to be the purest of all teas due to its gentle and minimal processing.\u003c\/p\u003e\n\u003cp\u003eThe tea leaves are harvested at the beginning of spring, in late February to early March. They are processed very carefully to preserve as much of their living enzymes and vitality as possible. First, the freshly harvested leaves are spread on bamboo mats to wither, with rounds of gentle piling initiating subtle micro-fermentation. Then they dry naturally under the cool rays of the alpine sun. The dried leaves are stored in big clay jars for one month to deepen their aroma and taste. Then, in April, they are roasted over a gentle flame, using as little heat as possible, before being steam pressed into small tea cakes. \u2028\u003c\/p\u003e\n\u003cp\u003eMr. Tang gave us a sample of this wild white last year when he first released it and we were astounded by how phenomenal it looked, pressed into bright green, paper thin miniature cakes. The leaves revitalize instantly in the gaiwan, as though they were picked yesterday. They smell tropical, like dehydrated pineapple and coconut nectar, and glow with colour. Tropical notes appear on the palate as well, where we taste fresh longan and fruit peel, amidst a bouquet of roses. \u003c\/p\u003e\n\u003cp\u003eForaged in such an extreme landscape, this tea bears the markers of its wilderness, and yet, through delicate craftsmanship, reveals its gentleness, generosity, and sweetness. Mr. Tang has managed to preserve its wildness, something no cultivation could ever imitate, while producing one of the most refined teas we carry. Its energetics are stunning, like a cross between pu’erh raw and medicinal white tea. It feels both grounding and expansive, offering comfort and clarity in equal measure. This white tea, with all of its purity and unmediated presence, will remain consistent for around ten infusions. This stresses the tea trees, causing them to strive for sunlight, increasing the amount of the amino acid l-theanine in their leaves. This constant striving for sun is what gives gyokuro its distinct mouthfeel, nutritional properties, and rich flavor. \u003c\/p\u003e\n\u003cp\u003eThis gyokuro is harvested by hand, one bud and two leaves. The leaves are then immediately steamed, then separated, rolled, and lastly, formed into a needle shape by experienced craftsmen. \u003c\/p\u003e\n\u003cp\u003eAs if nodding to the matcha from Shizuoka, this gyokuro both smells and tastes like matcha! We find it to be much more gentle and perfumed than gyokuro from Yame, with a powdery quality that evokes matcha even further in comparison to the denser and heavier gyokuro we carry. \u003c\/p\u003e\n\u003cp\u003eIt brews a soft, luminous green liquor that rests lightly on the tongue, suspended in mid-palate.
