In one of these conversations an old friend, Li, suggested that Tang grow tea in Li’s hometown, Yangta Village. That July the two of them traveled to Jinggu in Yangta and leased 11 acres of forested area from Li’s niece. \u003c\/span\u003e\u003c\/p\u003e\n\u003cbr data-mce-fragment=\"1\"\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\" data-mce-style=\"font-weight: 400;\"\u003eThe area they leased was wild growth, at about 6500 ft elevation. This is where they would eventually plant 70,000 Jinggu Big White tea trees. However, Tang found out, somewhat far into the process of planting, that one cannot harvest newly planted tea trees until they have stood in the ground for 3 years. Confronted with this long pause, Tang leased another tea garden in the mountain; a highly regarded area that was home to ancient pu’erh trees. And so, while he waited for his Jinggu Big Whites, Tang began making pu’erh from these very old trees. \u003c\/span\u003e\u003c\/p\u003e\n\u003cbr data-mce-fragment=\"1\"\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\" data-mce-style=\"font-weight: 400;\"\u003eAncient Spring is from an abandoned tea garden made up of less than 200 arbor trees of the Mengku varietal. The garden sits at 5,800 ft elevation, hidden deep in the woods on the North facing side of the mountain. It is only accessible by a steep trek through the dense pine forest. This is a protected area and has never been inhabited, as it is where the water source for the village is found. The Mengku trees, once planted by the great-grandfather of a local villager, are between 100 to 150 years old. \u003c\/span\u003e\u003c\/p\u003e\n\u003cbr data-mce-fragment=\"1\"\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\" data-mce-style=\"font-weight: 400;\"\u003eWe visited Tang’s tea estate in April 2019 and Tang took us on the steep hike to see his pu-erh tea garden. I spent several hours there, observing the graceful and efficient way that the elders harvested the tea leaves, studying the trunk structures of the ancient trees, and admiring the vibrant mosses that had grown on them. The tea trees are dwarfed by the other trees of the dense jungle, but the green of their leaves was so vibrant they still unmistakably stood out. My memory of this grove is still very vivid, from the unbelievable brightness of the blue sky, to the hyper-real songs of the different birds. \u003c\/span\u003e\u003c\/p\u003e\n\u003cbr data-mce-fragment=\"1\"\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\" data-mce-style=\"font-weight: 400;\"\u003eTo make Ancient Spring Mr. Tang blends the tea leaves from these Mengku trees with leaves from the ancient Jinggu Dabai varietal. Generally, leaves from ancient trees are rarely used to make pu’erh ripe, and are usually made into pu’erh raw, as they are considered more valuable that way. The temperature and humidity of the room was strictly controlled. During fermentation, the tea developed the unique aroma of sweet rice wine. It was bright, floral, sweet – an uncomplicated, easy drinking pu’erh, and directly expressed the soil, elevation, and climate of the mountain it came from. The basic quality it demonstrated encouraged us to age it. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eWhat surprised us over the last 9 years, as we checked in with Wuliangshan, was how beautifully its fundamental characteristics continued to develop over time. With age the tea has developed its own very distinct fragrance. Its once very sweet and bright flavour has grown broader and deeper, and its “greenness” has transformed into complex fruit notes: think poached apples and pears, or prunes. It is home to two of the oldest and most prestigious villages for pu'erh: Laobanzhang and Laomane, whose history spans 1400 years. The co-op’s objective is to demonstrate a commitment to natural, biodynamic farming and to preserve the land and ecosystem where they live for future generations. It is characterized by great expanses of ancient forests, where an abundance of wild growing arbor tea trees continue to grow undisturbed. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eThis pu’erh is crafted from the leaves of 200 year old trees, situated at around 6000 ft above sea level. The tea is made by a young craftsman, Li Jiakuan. Li’s ancestry is Dai-Chinese, however he lives with his family in Kokang. To learn the traditional craftsmanship of pu’erh tea he traveled to Menghai in Yunnan and studied intensively with a master there for 6 months. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eApplying what he learned in Yunnan to a varietal of pu’erh trees native to Kokang has yielded something very interesting to us. The unique terroir of the Tibetan Plateaus gives this pu’erh soft and gentle notes, to the extent that the first couple infusions of it remind us of a white tea. The depth of this tea’s character comes out gradually, and yet it still behaves very uniquely: the lingering floral impressions captivate the attention of our mouths in a way we wouldn’t expect in a pu’erh from Yunnan, which is usually more about sensation than flavour. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eWe would enjoy this tea on a sunny morning, when there is a want to be refreshed, and brought into the day gently. When I visited this village, at the foothill of Daxueshan 大雪山 (Big Snow Mountain), I drove for many hours, winding upwards between the peaks of this dense mountain range. The blue sky reflected in the water of the Lancang River below and, as I gained elevation, I could catch its shimmer coming through the banana and bamboo trees that lined the muddy roads. It occured to me that the mud of these narrow, tired roads was the same dark yellow colour it would have been one thousand years ago, when it was Tea Horse Road – the route used to transport tea to Tibet, Mongolia, and the emperor.\u003c\/span\u003e \u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\"\u003eArriving in the village of Xigui, at 3200 ft above sea level, is like having unfolded the mountains to discover a secret they’ve been conspiring with the clouds to keep. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\"\u003eOur Xigui comes from the family of Zhang Tianwen, who have been inhabitants of these mountains for generations. The tea trees, at roughly 200 years old, grow on steep hills overlooking the valley and rivers beneath them. These trees are not very tall, nor do they appear very strong: I found them surprisingly delicate looking, mottled in the colour of their bark, and almost frail seeming. Their age is expressed in the moss and the fungi inhabiting their trunks, and their vitality, however discrete, is evident in the width of their branches and the abundance of their dark, shiny green leaves. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\"\u003eThe name of the village, Xigui 昔归, is worth noting for how poetic it is. The first character, xi (昔) loosely translates to former times, or ‘the past’. The second character, gui (归), loosely translates to go back to, belong to, return to. It is a revered and seldom seen varietal, the leaves of which were traditionally reserved as Tribute Teas for emperors. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eMr. Tang, who crafted this incredible pu’erh, did so with the intention of honouring the thousands year old tradition of pu’erh making. It is appropriate that he used this ancient, yellow leaf varietal in this gesture – some believe that Yellow Bud was the first tree to be used to make pu’erh. And that he has crafted this tea using the traditional shai qing  晒青 process, in which the leaves are dried by the sun rather than being roasted or oven-dried. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eThe cake itself is something to behold. Its soft, mottled surface is notably different from other pu’erh cakes; the thick, long leaves are textured by yellow fur and in the light their colour looks like variegated gold.  Even pressed into a cake the leaves still look wild and alive, an indication of the structure and vitality of the trees from which they come from. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eWe would drink this tea to awaken ourselves to the ancient tradition of pu’erh making, or when we might want to experience some “otherness” in this category of tea. The development of these zi ya tea trees are closely linked to the environment - stronger sunlight and higher temperatures cause the tea leaves to have higher levels of anthocyanin. \u003cbr data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003eThe zi ya 紫芽（purple bud) tea trees were planted by Tang Wang 18 years ago in his tiny tea garden in Jinggu, Yunnan. The young leaves from these zi ya trees emerge purple, and then turn green as they mature. The leaves were \u003cmeta charset=\"utf-8\"\u003e\u003cspan data-mce-fragment=\"1\"\u003epredominantly \u003c\/span\u003eused to make black tea in the past.\u003cbr data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003eIn 2016, Mr. Tang made a small experimental batch of pu’erh with the leaves from the zi ya trees. Hand picked one-bud-two-leaves are picked in the early spring and are allowed to wither naturally on bamboo mats outdoors under the gentle morning sun. The leaves are pan-fried by hand in charcoal-fired steel wok, and then rolled and air-dried naturally. The tea is crafted following the traditional 晒青 shai qing (sun wilted\/dried) processing of pu’erh tea, where the tea leaves are dried naturally in the sun, instead of roasted or oven-dried. \u003cbr data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003eAfter the mao cha 毛茶 has been made, it is aged for one month, and then steamed to be pressed into individual cakes. Compared to 大叶种, \"big leaf varietal,\" it is far more elusive and lesser known; the small-leaf tea is not commercially speculated and is rare to find on the market. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eThe six ancient tea mountains of Yunnan are 攸乐 You Le, 革登 Ge Deng, 倚邦 Yi Bang, 莽枝 Mangzhi, 蛮砖Manzhuan, and 易武 Yiwu. Sacred Mountain is crafted with tea leaves sourced from two of the oldest and most secluded ones among them,  Xikong 习崆 in Yibang 倚邦 and Manzhuan 蛮砖.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eXikong is a remote, small village in Yibang, located at 4000 ft above sea level. On account of being so remote, the small number of ancient tea gardens here remain well preserved. We traveled to Yibang in 2019 to visit this ancient town and deepen our understanding of this region's long history for producing sought-after pu'erh. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eAmong the six ancient tea mountains, Yibang is located at the highest altitude. It was once the starting point of the Ancient Tea Horse Road, a network of paths that connected the mountains of Sichuan and Yunnan, and the physical link to Tibet, Myanmar, Bengal and Laos. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eI have vivid memories of the long, scenic and seemingly never-ending uphill journey to Yibang. It appears like a tiny, hidden gem inset between the magnificent mountain ranges that shield it,  way up in the sky. Nowadays, the small village of Xikong 习崆 is home to only a few indigenous inhabitants. There are a number of rare, ancient tea trees here, scattered throughout the region's deep forests.The mountain hills are steep and rocky; their soil is rich in clay and sand, and these features create an ideal environment for tea trees.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eThe lesser known, and more primitive  小叶种, \"small leaf varietal,\" of pu'erh trees are  indigenous to this region and have been growing naturally in this remote area for thousands of years. Compared to the big leaf varietal, the buds and leaves are smaller, shorter and rounder. The tea brews to a vibrant yellow-green color, and their taste is distinct - gentle, and nuanced.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eOnly around 100 kg of tea are produced from the Xikong terroir for the Spring harvest. To make this tea the first harvest leaves sourced from two ancient tea gardens were blended together. 70% originates from Xikong, where the Pu'erh is known to be soft and gentle without being \"thin,\" and for its orchid notes with rich, honey undertones. The remaining 30% originates from Manzhuan, where the Pu'erh is known for being sweet and smooth with strong energy, and a long, lingering aftertaste. We find all of these characteristics in Sacred Mountain, combined to make something very unusual, and so remarkable. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eThis tea was my first encounter with the beautiful sensation of the Small-Leaf varietal. As many of you know, Pu'erh raw is my favorite tea, and one that I drink everyday. And as habitually familiar as I am with this kind of tea, I was completely astounded by Sacred Mountain: it is the most captivating, surprising, and delicious Pu'erh raw I have had in recent memory. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eAs I opened the paper folded around the tea cake I was met by the unexpected scent of dried tropical fruit. It is a very balanced tea, but unmissable - and as strong as it is sweet. It's more angular floral notes linger for a long time on the palate, giving you an opportunity to breath them in. When I visited this village, at the foothill of Daxueshan 大雪山 (Big Snow Mountain), I drove for many hours, winding upwards between the peaks of this dense mountain range. The blue sky reflected in the water of the Lancang River below and, as I gained elevation, I could catch its shimmer coming through the banana and bamboo trees that lined the muddy roads. It occured to me that the mud of these narrow, tired roads was the same dark yellow colour it would have been one thousand years ago, when it was Tea Horse Road – the route used to transport tea to Tibet, Mongolia, and the emperor.\u003c\/span\u003e \u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eArriving in the village of Xigui, at 3200 ft above sea level, is like having unfolded the mountains to discover a secret they’ve been conspiring with the clouds to keep. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eOur Xigui comes from the family of Zhang Tianwen, who have been inhabitants of these mountains for generations. The tea trees, at roughly 200 years old, grow on steep hills overlooking the valley and rivers beneath them. These trees are not very tall, nor do they appear very strong: I found them surprisingly delicate looking, with mottled bark, and almost frail seeming branches. Their age is expressed in the moss and the fungi inhabiting their trunks, and their vitality, however discrete, is evident in the width of their branches and the abundance of their dark, shiny green leaves. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eThe name of the village, Xigui 昔归, is worth noting for how poetic it is. In Yunnan, the leaves of ancient arbor trees are almost exclusively used to make pu’erh raw, as they fetch a much higher price. It is very unusual practice to craft a ripe tea from them. The artisan, Zhang Tianwen’s, intention was to make a pu’erh ripe using leaves from arbor trees, crafted and fermented with traditional techniques, precisely because such a tea did not exist in the market. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eThis pu’erh was fermented for 6 months in small batches, and then aged for 9 months. The result of Zhang’s experiment is something very rich and satisfying. The ruby red liquor has a mouthfeel so rich it weighs on the tongue like broth. We were struck by its beautiful and plump leaves with a dark blue sheen, and also the clarity and gentleness of the tea. It has distinct elegant floral notes, and slightly smoky.Late last year, we were extremely fortunate to have the opportunity to acquire five precious cakes from the 2018 vintage year from Mr. Tang himself, from his own personal collection. His aged pu’erh cakes are rarely available as they are always snatched up by pu’erh connoisseurs and collectors as soon as they are release.\n\u003cp data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003eI was astonished by my first experience with the 2018 vintage. The mouthfeel is amazingly silky smooth - I could have mistaken it for an old-grove oolong if I didn’t know it was a pu’erh raw. It is exceptionally sweet - with no smokiness that I had experienced from the 2020 year. On the palate, it had distinct caramel, molasses and burnt sugar notes, followed by dark chocolate. When I smelled the lid of the gaiwan that I was using to brew it, it had notes of sweet dried prune.\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003eI was amazed at how much the Zi Ya pu’erh raw has aged in 3 years! The development of these zi ya tea trees are closely linked to the environment - stronger sunlight and higher temperatures cause the tea leaves to have higher levels of anthocyanin. \u2028\u2028\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003eThe zi ya 紫芽（purple bud) tea trees were planted by Tang Wang 18 years ago in his tiny tea garden in Jinggu, Yunnan. The young leaves from these zi ya trees emerge purple, and then turn green as they mature. The leaves were predominantly used to make black tea in the past.\u2028\u2028In 2016, Mr. Tang made a small experimental batch of pu’erh with the leaves from the zi ya trees.\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003eHand picked one-bud-two-leaves are picked in the early spring and are allowed to wither naturally on bamboo mats outdoors under the gentle morning sun. The leaves are pan-fried by hand in charcoal-fired steel wok, and then rolled and air-dried naturally. The tea is crafted following the traditional 晒青 shai qing (sun wilted\/dried) processing of pu’erh tea, where the tea leaves are dried naturally in the sun, instead of roasted or oven-dried. \u2028\u2028\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003eAfter the mao cha 毛茶 has been made, it is aged for one month, and then steamed to be pressed into individual cakes. Firstly, they contain enzymes that catalyze the breakdown of proteins in tea leaves, turning them into sugars, thus making the tea taste sweeter and more smooth. The auburn coloured liquor gradually intensifies with each infusion – never getting as dark as a fermented pu’erh, but still pointing towards the earth. It would be disrespectful, and could possibly hinder the trees growth, to harvest its leaves so instead, this pu’erh is made from what Mr. Tang, who makes it, calls “the shoot.”\u003c\/span\u003e \u003cspan style=\"font-weight: 400;\"\u003eThese buds are dense bundles of newly sprouting leaves, tightly nested within one another such that they appear flanked, like armor. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eThe first and only time I tried this tea was 5 years ago. Mr. Tang told me how precious this tea was, and that it came from ancient trees deep in the jungle on Daxueshan, near his tea farm in Jinggu, Yunnan. He explained to me that these trees are over 65 feet tall and that, in order for him and the local villagers to gather the shoots, they have to climb up them with their limbs wrapped around the trunk. To collect even a modest amount of shoots the pickers have to pack tents and living supplies in their backpacks and stay on the mountain for at least a night. \u003c\/span\u003e\u003cspan style=\"font-weight: 400;\"\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eIn Yunnan, it is a long-standing tradition for the locals to harvest a small amount of fresh shoots from wild tea trees. The shoots would be dried under the sun, or pan-fried. These teas are never for sale in the marketplace, and locals only make enough of it for their own consumption. Many years ago, Mr. Tang went to attend his brother’s wedding on Daxueshan, in Fengqing, Yunnan. This is where he first encountered the wild pu’erh shoot tea made by local villagers. He was immediately captivated by the unique smell of wild flowers present in the tea. Since then, every spring, he would visit a few villages in Daxueshan, collect a small amount of shoots from wild pu’erh trees with the vilalgers, and bring it back to his tea farm. As is the custom, he naturally withered the shoots in a sunroom and then roasted them over charcoal.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eAt 8200 feet elevation, the jungle terrain where these wild pu’erh trees stand is extremely steep, and a ways away from the nearest village. The trees have grown wild and untamed since they were planted by the ancestors of local, indigenous tribes more than one thousand years ago. These trees are noticeably unique: they are oddly tall, each with distinct character, and their buds emerge like dense bamboo shoots. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eMr. Tang crafts this tea according to the methods that have been passed down through generations of the local people. The shoots are slightly bruised as they are picked from the tree, making the tea naturally slightly fermented.  It is dried directly in the sun on bamboo mats after harvesting. Mr. Tang gently agitates the shoots as they are spread out on the mats to enhance the expression of their compelling fragrance. To finish, the shoots are slowly roasted over low-temperature charcoal for at least 2 weeks, removing the “coldness” from these wild tea leaves. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003ePrized for its energetics, and for offering us such a direct experience of ancient pu’erh trees, this year’s harvest of Daxueshan also delivers a shocking amount of flavour. The dense, freshly harvested buds are bright green with a streak of purple running along one side. They float in the gaiwan like small boats, and smell as though they are carrying an import of tropical fruit.\u003c\/p\u003e\n\u003cp\u003eThe liquor they brew is very clear, which can be deceiving, because its taste is anything but watery. The tea feels like electrolyte water on the tongue, and slides across the palate. It tastes like acacia honey and warm cotton before finishing intensely sweet, like dissolved sugar and lychee. In fact, the village itself does not have any tea trees – pu’erh will not grow there, as it is too windy. They carefully map out each and every one of them scattered throughout the vast, wild mountains that make up their territory. Ahang is one of the few people who could have shared this tea with us, as pu’erhs like this one are only directly accessible to the local indigenous people, and are rarely shared with those outside their communities. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eWhen we asked Ahang which village, exactly, this tea came from, he grinned and responded simply, “Lincang.” The Lincang area includes several prestigious and highly sought-after pu’erh producing villages, like Bingdao, Xigui, and Mangfei, and we admired that Ahang would not direct us towards the exact home of this “Secret Realm” amongst them. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eHe told us that, a few years ago, he came across a dozen ancient tea trees, at least 500 years old, and that he immediately fell in love with them. They are towering tea trees - their huge canopies extended far from their trunks, and cast incredible shadows on the brush below them. They expressed such strength and intelligence, Ahang knew their leaves would yield incredible tea.  \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eSince this encounter the leaves from these dozen ancient tea trees have only been harvested once per year, during the first Spring harvest. Their pu’erh cake is what is known as “pure material,” meaning it is not, like most high-value pu’erhs, slightly blended with other, younger tea leaves to reduce the cost of each cake. Instead, this tea is entirely made up of ancient leaves. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eAs you might imagine, this pu’erh has exceptional energy, complexity, and “Qi.” It will last for more than 20 infusions, and maintains a soft, weighted, medicinal quality that sinks deep into our person throughout. Initially, its taste references the wild jungles and mountains it comes from: the taproots of these ancient tea trees extend so deep into the earth, the minerals they pull up and deposit in their leaves produce a taste that is strong and wild – like an entire forest and all of its seasons, bound together. It is a rare experience for most of us, to encounter this leaf-flavour. Later infusions are less intense, drawing out the sweetness of rock sugar, earth, and wild honey. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eThere are teas that support complex states, the handling of unanswerable questions, and that can meet us when we find ourselves in uncharted places of our own. He had rented a small place in rural Yunnan where his only intentions were to read, reflect, and drink tea with friends. In one of these conversations an old friend, Li, suggested that Tang grow tea in Li’s hometown, Yangta Village. That July the two of them traveled to Jinggu in Yangta and leased 11 acres of forested area from Li’s niece. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eThe area they leased was wild growth, at about 6500 ft elevation. This is where they would eventually plant 70,000 Jinggu Big White tea trees. Tang also leased another tea garden in the mountain that locals had shown him; a highly regarded area that was home to ancient pu’erh trees. And so, while he waited for his Jinggu Big Whites, Tang began making pu’erh from these very old trees. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eWe visited Tang’s tea estate in April 2019 and Tang took us on the steep hike to see his pu-erh tea garden. I spent several hours there, observing the graceful and efficient way that the elders harvested the tea leaves, studying the trunk structures of the ancient trees, and admiring the vibrant mosses that had grown on them. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eFor Mr. Tang, crafting beautiful teas from a clean and balanced ecosystem is sacred. He is deeply dedicated to the craft of traditional tea making; this philosophy guides everything he does, and is embedded in every single tea he makes. Alongside being an expression of this special ecosystem, his teas are so distinctly peaceful, and feel extremely clear, just as he feels as a person. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eWe have been asking Mr. Tang for a pu’erh ripe for many years, but making this fermented tea requires a production facility where the humidity and temperature can be controlled. Mr. Tang did not have access to a facility like this until very recently. In 2017, his good friend Qing Shui invited him to select some of his clean and high quality pu’erh raw to ferment into Pu’erh Ripe at the Jinggu Tea Factory. Mr. Tang used the leaves of 100 year old tea trees from Jinggu and blended them with tea leaves from Bulang Mountain. His thought was to combine the roundness  and sweetness of old tea trees from Jinggu with the depth and intensity of tea from Bulang Mountain.  \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eThe tea leaves were harvested in the Spring of 2017 and fermentation started later that year, lasting for 6 months. The tea was then air-dried and aged until 2020 before being pressed into cakes. Mr. Tang named his first pu’erh ripe “Shu Zi,” a phrase taken from the philosophical works of the ancient Chinese philosopher, Chuang Tzu (Zhuang Zi). The name translates directly as  “\u003c\/span\u003e\u003ci data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003ewith deep plowing and careful and repeated weeding of the seed, my harvests were rich and abundant.\u003c\/span\u003e\u003c\/i\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003e” A sentiment that resonated with Mr. Tang’s approach to farming and crafting tea over the last decade: meticulously, fastidiously, and honestly. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eThis is one of our favourite pu’erh ripes. It has the rare quality of maintaining a light, almost refreshing mouthfeel, while still being earthy and soothing. The leaves are combined with aged orange peel (Chen Pi) from red mandarin oranges grown in Xinhui, Guangdong, (the most well-known village for producing aged orange peel). \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eOrange peels are revered as both a medicine and a deeply satisfying flavour in China. They must be aged for at least six years before being used in tea; any younger and their moisture and sugar content will cause the tea cake to grow moldy. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eThe orange peel in this tea, now 20 years old, is gently aromatic, and deeply ingrained in the tea it has been pressed with. The experience of drinking this pu'erh ripe is mellow and sweet, sustaining its balanced flavour through many infusions – an indication of its quality. Its liquor remains very red and has a clean, succinct aftertaste. However, Tang found out, somewhat far into the process of planting, that one cannot harvest newly planted tea trees until they have stood in the ground for 3 years. Confronted with this long pause, Tang leased another tea garden in the mountain that locals had shown him; a highly regarded area that was home to ancient pu’erh trees. First, they offer great value: Yellow Leafs are an accessible way to experience pu’erh from coveted villages and ancient trees that would otherwise be inaccessible, in both availability and price. Second, Yellow Leafs are generally more gentle and sweeter on the palate, being made from leaves that were slightly older when they were harvested. He crafted it from arbor trees between 200 and 300 years old. The trees are 70 years old, and as imperial grade, only the tips are selected to make this pu’erh. As we have mentioned in regards to other teas where aged orange peel is used, this fruit must be aged for at least 6 years before being combined with tea to be sure all moisture is gone from it. Aged this long, dried orange peel is considered a medicinal substance on its own, and carries many benefits to the body. The flavour also becomes full and concentrated over time. On horse, the entire journey would take 3 months.\u003c\/p\u003e\n\u003cp\u003eTea was first brought to Tibet during the Tang Dynasty in AD 641. Tibetan royalty and nomads loved tea for a few different reasons. First, because it was a hot beverage in a cold climate. Secondly, at such high elevations, Tibetans could not grow many vegetables, so tea was an important part of their diet and a powerful source of vitamins, minerals and antioxidants. Traditionally, tea was blended with local yak butter to make a distinctive salty, oily and calorie dense drink that served as a mini-meal for herders. \u003c\/p\u003e\n\u003cp\u003eTibetan tea is usually made with older tea leaves and stems, and is considered a type of dark or fermented tea. Like pu’erh, it is traditionally pressed into bricks for ease of transport and storage. \u003c\/p\u003e\n\u003cp\u003eBy the 11th century, tea had become the prime trading commodity between China and Tibet. For 130 pounds of tea the Chinese would get a single horse, that they then used on battlefields in the North, defending their country against Genghis Khan. \u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003eThis Tibetan tea, from Ya’an, Sichuan, is made from younger tea leaves harvested on Mengding Mountain. It was fermented, and then slowly roasted. The roasting process gives it a warming character, and an aroma reminiscent of toffee cake. It is bright and lean, with a very comforting mouthfeel and a fruity finish that tastes like raw cacao and dried apricot. Tea was an important commodity, worth more than porcelain and silk, traded between the tea region Ya’an, of Sichuan, and the holy Tibetan city of Lhasa. To be traded the tea was transported along the Ancient Tea Horse Road, a historic passageway that stretches 2250 km, from Ya’an to Lhasa.\u003c\/p\u003e\n\u003cp\u003eTea Horse Road remains one of the highest and harshest trails in Asia, passing from the verdant valleys of Sichuan, through the snow capped Tibetan Plateau, the freezing Yangtze and Mekong Rivers, before ascending 17,000 ft into the mysterious Nyenchen Tanglha Mountains to finally reach Lhasa. On horse, the entire journey would take 3 months.\u003c\/p\u003e\n\u003cp\u003eTea was first brought to Tibet during the Tang Dynasty in AD 641. Tibetan royalty and nomads loved tea for a few different reasons. First, because it was a hot beverage in a cold climate. Secondly, at such high elevations, Tibetans could not grow many vegetables, so tea was an important part of their diet and a powerful source of vitamins, minerals and antioxidants. Traditionally, tea was blended with local yak butter to make a distinctive salty, oily and calorie dense drink that served as a mini-meal for herders. \u003c\/p\u003e\n\u003cp\u003eTibetan tea is usually made with older tea leaves and stems, and is considered a type of dark or fermented tea. Like pu’erh, it is traditionally pressed into bricks for ease of transport and storage. \u003c\/p\u003e\n\u003cp\u003eBy the 11th century, tea had become the prime trading commodity between China and Tibet. For 130 pounds of tea the Chinese would get a single horse, that they then used on battlefields in the North, defending their country against Genghis Khan. \u003c\/p\u003e\n\u003cp\u003eThis Tibetan tea from Ya’an, Sichuan is from younger leaves that were harvested on Mengding Mountain. It was fermented, slow roasted, and then scented with fresh jasmine flowers that were harvested in Sichuan. As we would expect from such high quality jasmine flowers, the scent of this tea is very striking: enticing, baked, sweet, and intoxicatingly floral. \u003c\/p\u003e\n\u003cp\u003eThe jasmine overlaid on this otherwise very gentle fermented tea feels heady and nostalgic. The flowers sweeten its taste, bringing out the tea’s jujube and cakey qualities. In the most pleasant way, we’re reminded of drugstore jasmine candies.
