The buds of the tea tree were such a pale green they almost appeared white and they had the same scent as orchids. Chen Yuanhe named this tree Baiya Qilan 白芽奇兰 . Its name has four characters: the first character, 白, translate into “white,” 芽 means “bud,” 奇 indicates “special” or “unique” and 兰 is the character for “orchid.” Therefore the name translates directly as “white bud special orchid;” it is referred to as “white bud Qilan”\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\"\u003eBaiya Qilan is an oolong from deep within the mountains of Fujian. Its remote origin has meant that its cultivation and crafting has not been influenced by popular tastes that influence present day tea production. This tea maintains traditional oolong craftsmanship, where it is still oxidized naturally in several rounds of yaoqing, and is slow roasted over lychee charcoal.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\"\u003eThe climate of southern Fujian is hot and humid. It’s highest peak, Daqin Mountain, stands at over 5,000 ft elevation. Pengxi Village, the origin of Baiya Qilan, is located at the western foothills of the towering Daqin mountain. The mountains of Pengxi are also high elevation; the air that surrounds them is nearly always foggy. Clear streams run through Pengxi, the soil is fertile and nutritious, and the hills are covered in bamboo and lush forest. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\"\u003ePengxi Village is perhaps best known for its honey pomelo. During the Ming Dynasty, in the 1700’s, honey pomelo from Pengxi was selected as a Tribute Article for the Emperor. Over the last century, many of Pengxi’s tea farms have actually been converted to far more profitable pomelo farms. Baiya Qilan, the beautiful tea from Pengxi, is really a hidden treasure of this village; we could say that it continues to grow, but only in the shadow of the pomelo. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\"\u003eThis Baiya Qilan is crafted by tea veteran Chen Huoping. A native of Pengxi Village, Chen started his foray into tea in 1966, when he was still very young. He worked for the Pengxi County Tea Company, first as a buyer, and then later in the research department. His research focused on detecting the inorganic mineral content of the soil in and around his village. Starting in 1978, and for the next twenty years, Chen cultivated 3 acres of land in Pengxi and converted it into tea farms. There he planted and studied a number of oolong varietals, including Qilan, Tieguanyin, and Buddha’s Hand.  He spent his days observing the tea trees, their growth cycles in different seasons, what temperatures caused the tea trees to sprout and bud, and how many centimeters the tea leaves grew in a day. His research method kept him in close contact with the trees, his home village, and the climate they were all subjects of.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\"\u003eWhen I visited Chen at his family home in Pengxi he wanted to take me to see his highest tea gardens, which are at almost 3,000 ft elevation. On account of the heavy rain that day we never made it. There are no roads for vehicles to these tea gardens, and the hills are very steep. Even motorcycles cannot climb the hills; they move at the speed of tired horses. Those tea gardens, Chen assured me, are only ever accessible by foot. I did, however, get to visit the tea garden where this Baiya Qilan grows. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eThis tea comes from semi-wild tea trees that grow in a tea garden that sits at 2,200 ft elevation. Still very remote, the trees grow with minimal human intervention; no pesticides or fertilizers are used around them. The tea is crafted following traditional techniques, roasted slowly over lychee charcoal for over 30 hours. Chen explained that, as he got older, he gave up on making “uninteresting tea.” He began to make his tea by combining the traditional hand-picking of leaves, manual “yaoqing,” hand rolling, and slow charcoal roasting. When crafting tea this way the cost is much higher, and the yield is lower, but this, he says, is what makes it “interesting.”\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eYou will agree with Chen. The results of his care and experience on this special varietal produce a very compelling oolong. The tea has a soft, floral fragrance, and spreads in the mouth as though it has thickened the water. Anxi is a mountainous region; there are 2943 mountain peaks here that measure above over 3000 ft in elevation! Tea cultivation here dates back more than two thousand years, to the Northern Song Dynasty.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\"\u003eThe soil in Anxi is extremely well suited for the growth of tea trees, consisting primarily of lateritic red earth. This special type of soil is formed by the weathering of the rocks in the densely clustered mountains, and is extremely high in minerals such as iron and aluminum. In conjunction with this mineral rich soil, Anxi’s subtropical marine climate brings termperate weather across all seasons and consistent precipitation, ideal for tea trees.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\"\u003eMeizhuang Village in Anxi, Fujian is one of three villages where Golden Cassia originates from. The varietal is easily distinguished: its fresh buds are tinted yellow, and the trees are known by their osmanthus-like fragrance. The Chinese name for Golden Cassia is 黄金桂. The first character, 黄, translates into “yellow,” the second character, 金, translate into “gold,” the third character, 桂, translate into “osmanthus.” \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\"\u003eWhether or not you are familiar with this varietal will depend on where you live. It has long been most common for Golden Cassia from Meizhuang Village to be exported to Japanese and Southeast Asian markets. (The preferred oolong in Japan is Golden Cassia from Anxi). As a result, it is a tea we see less in the West. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\"\u003eThis Golden Cassia is crafted by Master Lin Zhenwen, a generational tea farmer of Meizhuang Village. He is one of the few “old masters” in the village, known for having the highest skill at crafting oolong. Master Lin crafts his Golden Cassia using the traditional regional method: the tea sees 4 rounds of yaoqing (bruising) followed by slow-fired charcoal roasting. He only makes 50 kilograms of this tea every year, once in the Spring and once in the Fall, for his long-standing customers in Hong Kong. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\"\u003eThis Golden Cassia, crafted by Master Lin, has a deep, warm and floral fragrance and yet it’s taste is gentle and sweet. This makes the tea enveloping, while still being very light on the palate. On account of the tea-appreciating Buddhist monks that inhabited Taiping, Da’an is home to the “mother trees” of many varietals of Phoenix oolongs that they planted around their temple. The mother tree of this varietal – Songzhong – lives here, and is now at least 400 years old.\u003c\/span\u003e\u003c\/p\u003e\n\u003cbr data-mce-fragment=\"1\"\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eIt is understandably difficult to source tea from such a highly sought after region, especially the teas made from older trees. This tea is personally sourced by our much respected tea mentor. In this tea, they explained to us, the unique terroir of Wudong, the impressive age of the trees (around 50 years old), and skilled craftsmanship combine to create an outstanding example of the Song cultivar. \u003c\/span\u003e\u003c\/p\u003e\n\u003cbr data-mce-fragment=\"1\"\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eTasting this tea, we see how these factors have synthesized into something singular and exceptional. In the Gaiwan, the leaves look like dark ropes, mottled in colour from their bruising, and slick and strong like arame seaweed. As we would imagine, this tea is intensely aromatic - floral, fruity, and slightly smoky - with savoury, saline undertones difficult to name. Its liquor is smooth and thick, coating your mouth and throat with a sweetness that lingers. We find wild mountain flowers and pomelo in this tea, woven through a dense mineral foundation. To fan-out the qualities and characteristics of Pheonix Dancong, cultivars select a wild “mother tree” amongst the indigenous and ancient tea trees in Phoenix Mountains for its distinct fragrance and taste. They then graft this mother tree onto existing trees, cloning and then propagating it. After several generations of this practice, there are almost one hundred well known varietals of Phoenix Dancong, each with a unique fragrance and taste. He patiently experimented with processes for crafting oxidized tea and today produces some of the rarest oolongs in Japan. \u003cbr\u003e \u003cbr\u003eInzatsu 131 is the name of an exotic varietal that was brought over to Japan from Manipur, India a century ago. Mr. Takahashi is currently the only person still cultivating it in Japan, as he believes it to be particularly well suited for crafting into oolong. \u003c\/p\u003e\n\u003cp\u003eThis oolong is completely hand picked. After being harvested the leaves are withered in the sun for 30 minutes to an hour. Then, they are further withered for about 10 hours using a yōseiki (a withering and shaking machine). During this stage the tea leaves give off a wonderfully fragrant aroma. Next, the leaves are pan-fired for about 10 minutes — just long enough for them to become slightly crisp. After that, they are wrapped in cloth and gently steamed, softening them again. \u003c\/p\u003e\n\u003cp\u003eThis tea is very significant to us as it is the only whole leaf, hand picked, and oxidized tea that we have tried from Japan. It is beautiful to taste this rare varietal crafted with the techniques that Mr. Takahashi has perfected over the past two decades. Amongst oolong varietals Shuixian is famous for its fragrance and floral after taste: you will not be confused as to how this tea got its enchanting name. \u003cbr\u003e \u003cbr\u003eThe tea leaves were harvested in the spring of 2024. They received two rounds of charcoal roasting in October, and were then aged for one year to integrate the florality of the tea leaves and the taste of the roasting. We often find that lighter style rock oolongs lean almost too far to the floral side, unbalanced without the depth and complexity that comes from further roasting. However, this Shuixian surprised us. The leaves themselves have an innate depth and body, easily evoked by subtle roasting, and not overwhelmed by the bouquet of flowers it holds. \u003c\/p\u003e\n\u003cp\u003eIts lightly golden liquor is sweet and smooth, with metallic edges that leave a strong impression on our palate and articulate notes of cacao shells and violet. Its roasted notes and mineral depth come out through infusions, moving us out of this bed of flowers and into the cliffs from which this tea came. It’s a relaxing journey that brings warmth and stillness to the body, almost like it's occurring in a dream.
