Following tradition, the core producing region of Longjing in Xihu is divided into five areas that correspond to the mountains: Shi (Lion), Long (Dragon), Yun (Cloud), Hu (Tiger), Mei (Mume). Our Longjing is from Baihefeng, or “White Crane Peak,” which belongs to the Long (Dragon) subdivision of the region, 6 km southwest of Xihu West Lake.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003e\u003c\/p\u003e\n\u003cdiv style=\"text-align: left;\"\u003e\u003cimg style=\"float: none;\" alt=\"\" src=\"https:\/\/cdn.shopify.com\/s\/files\/1\/0091\/5737\/8153\/files\/Dragonwellmap-beige.png?v=1587076960\"\u003e\u003c\/div\u003e\n\u003cp\u003eThe uniqueness of Longjing from Baihefeng is a result of both the soil and cultivar of the tea plants. The soil on Baihefeng is unique: a white, sandy soil composed mostly of pebble-sized fragments of white quartzite, which has been weathered and eroded. Thus, it is very rich in the minerals that are absorbed by the roots of the tea plants. \u003c\/p\u003e\n\u003cp\u003eThe cultivar is an indigenous varietal called Quntizhong. This is an inherited cultivar, more traditional than the commonly used, Longjing 43. Quntizhong dates back more than 1000 years ago, to the Qing Dynasty, meaning this tea tastes very much like old-style Longjing that ancestors would have enjoyed.\u003c\/p\u003e\n\u003cp\u003eOur Dragonwell is crafted by the one and only tea master, Tang Xiaojun. Tang is famous for crafting the finest and most historically accurate Dragonwell entirely by hand. Each year, he makes a very limited quantity of handcrafted Dragonwell for sale. \u003c\/p\u003e\n\u003cp\u003eThe leaves for this tea were picked on April 9, 2025, as the colder than usual temperatures this year delayed tea harvest from high elevation farms by roughly 2 weeks. Each experienced tea picker is only able to pick around 1000g of fresh leaves each day on account of the rigorous picking standards. Once harvested, the fresh leaves are set out on a bamboo mat and withered for 4-8 hours, depending on the temperature, humidity, and the amount of sunlight each day. The leaves are then pan fried in small batches for two rounds. \u003c\/p\u003e\n\u003cp\u003eThe first round, known as the “kill-green” process, usually lasts for 10 minutes, and is used to hand-shape and flatten the leaves. The second round lasts around 30 minutes, during which the experience of the tea maker is crucial, as a series of different gestures and movements are required throughout this process - shaking, pushing, holding, pressing and rubbing - all while the pan is at an extremely high temperature of 300°C. This technique takes years of experience to perfect, and when mastered, ensures the finished tea has a better aroma and less astringency. \u003c\/p\u003e\n\u003cp\u003eAfter pan frying, the leaves are aged with limestone in a large earthenware vessel for 5 days. This is an important step in making traditional Longjing, as the limestone helps absorb any remaining moisture in the leaves without absorbing the tea’s aroma with it. \u003c\/p\u003e\n\u003cp\u003eYou will notice right away that Dragonwell tea leaves appear flat and broad. This is from the hand shaping that happens in the pan frying stages. They pile on top of one another in the gaiwan like narrow sheets of paper, and open quickly as soon as they meet water, becoming vibrant and dimensional, like images in a picture book. \u003c\/p\u003e\n\u003cp\u003eTheir liquor looks like melted quartz or glacier run off: a clear, icey green that reminds us of the mountain lake around which these tea leaves grew. It has a soft, delicate mouthfeel that increases in density and unity through infusions. In terms of tasting notes, its elegance is in its quietness, but we do get distinct hints of jungle flowers, orchids, and water plants. In light of this tea’s gentleness on the palate one would not expect it to deliver the amount of energy that it does. Its energy builds slowly and gently in the core of us as we drink it through infusions. Its champagne colour liquor has a rich, nutty aroma and an oceanic, umami forward taste. On the finish we find a light, uplifting astringency with a honeyed cereal undertone. The balancing act this tea performs gives this harvest a very satisfying fullness. It will be enjoyed by those who like a stronger tasting green tea that isn’t too cooling. \u003c\/p\u003e\n\u003cp style=\"text-align: center;\"\u003e\u003cstrong\u003e. . .\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eMr. Tang’s family are generational tea farmers in Laoshan Mountain of Qingdao, Shandong. Shandong is located in Northeastern China. It is named after Mount Lao, a magnificent mountain range recognized by its striking, slim, elongated cliffs. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eThe many small plots that make up Mr. Tang’s tea farm are scattered along this coastline, at the foot of Mount Lao. Some are distributed right along the beaches, exposed to the salty wind that blows off of the water, while others are tucked slightly up into the forested hills, protected by the pine trees and the mountain behind them. There is a great peace that settles over this area of Laoshan. The tranquility of Mr. Tang’s tea farm is resounding, and extends between its many parts. Following a path that connects the plots next to the ocean to the ones tucked away in the forest, the sound of the waves progressively gives way to the sound of forest birds and running springs and the scent of the ocean turns into the scent of red pines and green plum. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eLaoshan is a very unique tea producing area in China. It is as far North as a tea region can be, and at the highest latitude before temperatures become too cold for tea trees to survive. The small farms in Laoshan have Mount Lao on one side, and are otherwise surrounded by ocean. The air is very humid, and it sees longer winters with more frost and snow than tea regions further South. Another special feature of Laoshan is that the water which irrigates the tea trees comes from natural springs that run through Mount Lao. This water is very pure and high in the minerals it collects from the cliffs of the mountain. It is no wonder we find that teas from Laoshan have such a distinct taste when compared with teas from Southern China. The mountain minerals and the constriction that comes with cooler temperatures give these teas a great richness, and the wet air coming off of the ocean has imparted umami and an unmistakable saline taste to them. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eBecause of the colder climate, the first harvest of Laoshan green tea is almost a month later than the first harvest of green teas from tea regions in Southern China. When the time comes, the leaves are hand harvested by Mr. Tang’s mother and grandmother, from their tea gardens that are scattered between Mount Lao and the Yellow Sea. We would expect their liquor to taste like raspberry juice, but are pleasantly surprised by its refined earthy notes and gentle tartness.\u003c\/p\u003e\n\u003cp\u003eThis tea has a broth-like mouthfeel, which feels less drying and more medicinal than previous harvests. Later infusions bring out more of the hibiscus’ bright, ascorbic notes, balanced by the curiously weighty mouthfeel these dense blossoms impart to the liquor. This feels like the perfect tisane for early spring time, the way that Beaujolais, or light red wine, is reserved for this time of year. Yongan is a small village nestled in the Fujian mountains, surrounded by untouched forest.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eTo make the flowers into tea, they are handpicked in the fall, and dried naturally in the sun for around 10 days. It is the most simple method, and also the most delicious. We were thrilled to find someone producing hibiscus this way, as it is rare to find it so fresh and intact.  \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eMs. Luo’s hibiscus is unlike anything else. The tea glows even when dry. It has long been known that, left on their own, the microbes and fungi found naturally in pu’erh raw will ferment. Without intervention this transformation from a pu’erh raw to a pu’erh ripe will take between 20 and 25 years. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\" data-mce-style=\"font-weight: 400;\"\u003eThe form of pu’erh ripe that we know today was “invented” in the 1970’s. It’s fermentation is expedited by heat and humidity, so that instead of it taking 20 years, it takes around 6-8 months for the pu’erh raw to become a pu’erh ripe.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\" data-mce-style=\"font-weight: 400;\"\u003eThe Essence of Lincang is a small batch pu’erh ripe made from leaves from 200 years old tea trees. It is made by blending two harvests: the spring harvest and the autumn harvest, which adds complexity to this tea. Generally, leaves from ancient trees are rarely used to make pu’erh ripe, and are usually made into pu’erh raw, as they are considered more valuable that way. This is something that immediately drew us to this tea. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\" data-mce-style=\"font-weight: 400;\"\u003eTo ripen it, the leaves were carefully fermented on wooden pallets, off the ground to ensure cleanliness. The temperature and humidity of the room was strictly controlled. During fermentation, the tea developed the unique aroma of sweet rice wine. The tea was then aged for six months at room temperature, before being carefully pressed into cakes.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\" data-mce-style=\"font-weight: 400;\"\u003eThe result is a full bodied pu’erh that is an absolute pleasure to drink, especially for its young age. It is not as deep or ‘underground’ as many pu’erh raws, offering a more nuanced experience of fermented tea. It has notes of sweet glutinous rice, moist earth and jujube dates. Its mouthfeel is smooth and satisfying; the sensation is comparable to drinking consommé — rich in texture and flavor, but with clarity and purity. In one of these conversations an old friend, Li, suggested that Tang grow tea in Li’s hometown, Yangta Village. That July the two of them traveled to Jinggu in Yangta and leased 11 acres of forested area from Li’s niece. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eThe area they leased was wild growth, at about 6500 ft elevation. This is where they would eventually plant 70,000 Jinggu Big White tea trees. Tang also leased another tea garden in the mountain that locals had shown him; a highly regarded area that was home to ancient pu’erh trees. And so, while he waited for his Jinggu Big Whites, Tang began making pu’erh from these very old trees. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eWe visited Tang’s tea estate in April 2019 and Tang took us on the steep hike to see his pu-erh tea garden. I spent several hours there, observing the graceful and efficient way that the elders harvested the tea leaves, studying the trunk structures of the ancient trees, and admiring the vibrant mosses that had grown on them. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eFor Mr. Tang, crafting beautiful teas from a clean and balanced ecosystem is sacred. He is deeply dedicated to the craft of traditional tea making; this philosophy guides everything he does, and is embedded in every single tea he makes. Alongside being an expression of this special ecosystem, his teas are so distinctly peaceful, and feel extremely clear, just as he feels as a person. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eWe have been asking Mr. Tang for a pu’erh ripe for many years, but making this fermented tea requires a production facility where the humidity and temperature can be controlled. Mr. Tang did not have access to a facility like this until very recently. In 2017, his good friend Qing Shui invited him to select some of his clean and high quality pu’erh raw to ferment into Pu’erh Ripe at the Jinggu Tea Factory. Mr. Tang used the leaves of 100 year old tea trees from Jinggu and blended them with tea leaves from Bulang Mountain. His thought was to combine the roundness  and sweetness of old tea trees from Jinggu with the depth and intensity of tea from Bulang Mountain.  \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eThe tea leaves were harvested in the Spring of 2017 and fermentation started later that year, lasting for 6 months. The tea was then air-dried and aged until 2020 before being pressed into cakes. Mr. Tang named his first pu’erh ripe “Shu Zi,” a phrase taken from the philosophical works of the ancient Chinese philosopher, Chuang Tzu (Zhuang Zi). The name translates directly as  “\u003c\/span\u003e\u003ci data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003ewith deep plowing and careful and repeated weeding of the seed, my harvests were rich and abundant.\u003c\/span\u003e\u003c\/i\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003e” A sentiment that resonated with Mr. Tang’s approach to farming and crafting tea over the last decade: meticulously, fastidiously, and honestly. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eThis is one of our favourite pu’erh ripes. It has the rare quality of maintaining a light, almost refreshing mouthfeel, while still being earthy and soothing. Their black bean tea is hand sorted and net-roasted over direct flame with far-infrared heat; a very old technique that produces a clean, crisp taste with a deep roasted aroma.\u003c\/p\u003e\n\u003cp\u003eWhat makes Tamba Black different from other black soybeans is primarily time: a standard black soybean matures in about 70 days, whereas Tamba Black takes about 100. Longer maturation time means that the beans absorb more nutrients, grow larger, and develop a richer, sweeter, more full-bodied flavour. \u2028\u003cbr\u003eWe are honoured to be the first shop outside of Japan to carry products from Odagaki Shōten. After agreeing to work with us they spent 6 months preparing a special batch of black bean tea for Cultivate. The first batch we received is only 12 kg, so it will certainly be treasured. \u003c\/p\u003e\n\u003cp\u003eIn a final stage of crafting this tea Odagaki Shōten breaks the beans apart into pieces that are the perfect size for brewing, so the tea itself looks a bit like crumbled cacao. It brews a cloudy liquor that slowly turns plum colour as the pieces of bean settle in the carafe. The smell and taste of the strained liquor is incredible, and somewhat unexpected – like coffee, but without any acidity. It has a broth-like mouthfeel and a sharp, sweet finish. \u003c\/p\u003e\n\u003cp\u003eThis delicious, caffeine free tea can be enjoyed hot or chilled. Enjoy it knowing that it has many health benefits, and is considered a beauty tonic in Japan.
