In 2009, while he was tracking boars in the mountains, he stumbled into an area dense with wild, abandoned tea trees. He was taken aback by the beauty of this discovery: to see so many tea trees, thriving on their own, at home in the ancient forest. Firstly, he does not own any land himself, and he does not have a tea farm. He focuses on crafting tea from wild and semi-wild abandoned tea trees in the mountains, and his wealth is only his understanding of their location and their rhythms. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eThis tea is made from tea trees that were planted by tea farmers in the 1970’s, and then abandoned as people left the villages for coastal cities. They are of the traditional Zhenghe Dabai (Big White) 政和大白 varietal, situated within thousands of acres of old growth forest, more than 3600 feet above sea level. They grew from seeds that were washed downstream from a river that runs through the middle of the forest. In these vast, old growth forests, the wild tea trees compete with a variety of other types of trees, all seeking precious, diffused sunlight. Thus, the roots of the tea trees extend deep into the earth to draw nutrients, and they grow slowly, accumulating these rich nutrients and compounds in their leaves. We feel this richness in the tea they yield. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eMr. Fan crafts his white teas traditionally: the leaves are naturally withered and dried by sunlight, a slow and delicate process that takes between 48 and 60 hours. However simple it may sound, this method requires painstaking care and attention, along with a great deal of experience to do well. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eThe leaves must be picked early in the morning and carefully carried down the mountain in bamboo baskets to ensure that the leaves stay intact and are not damaged as they are handled. The fresh leaves are swiftly and carefully spread out on bamboo mats, starting the process of withering. They are first withered in the sun, and their moisture level is monitored closely. When the moisture level is at 40-50% the leaves are moved indoors. Finally, when the moisture level reaches 10-20%, the leaves are gently roasted over charcoal at a very low temperature. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eThis Semi Wild Shoumei consists of one-bud-three-leaves. That July the two of them traveled to Jinggu in Yangta and leased 11 acres of forested area from Li’s niece. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\"\u003eThe area Tang and Li leased was wild growth, situated at about 6500 ft elevation. On this land they planted 70,000 Jinggu Big White tea trees; an indigenous varietal of white tea unique to this area. (There are still a few ancient examples of them, some over 400 years old, in and around Yangta village). Having never made tea before, Tang read and researched as he went – learning by way of experience and reference texts in equal measure. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\"\u003eOnly 30,000 of the initial 70,000 Jinggu Big White trees Tang and Li planted survived. Tang found out, somewhat far into the process, that there would be no tea to make regardless of how many trees made it, as one cannot harvest newly planted tea trees until they have stood in the ground for 3 years. And so they waited, and Mr. Tang continued to learn.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\"\u003eDoing some research on historical teas from Yunnan, he learned that, around 800 years ago, there was a Tribute white tea made in Jinggu called “White Dragon Beard” that was very similar to what we know nowadays as Silver Needle. When the Jinggu Big White trees were ready to harvest he was eager to try making white teas like Silver Needle and White Peony from their leaves as was traditionally done, but that, on account of economic pressures, had fallen out of practice. He has since experimented with this to great success. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\"\u003eGreen Peony is made from the First Harvest leaves of the tea trees Mr. Tang and his friend Li planted themselves in 2006, when they started the tea farm. There is a small period of time in early spring, before the Qingming solar term, where the climate in Yunnan causes one side of the tree’s leaves to turn a dark, intense shade of green, while the other side becomes a fuzzy silvery-white. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\"\u003eGreen Peony is made only with leaves gathered at this moment and, as it is such a brief period of time, crafting this tea requires great attention to the weather. When the conditions are right Mr. Tang is not always able to find enough hands to help him harvest before the leaves go through their next transformation. Green Peony is a spontaneous tea. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\"\u003eWhen it is successfully set into motion, the leaves are picked according to the traditional standards of one bud and one leaf. Mr. Tang then spreads the fresh leaves out on bamboo trays and takes them indoors where they gradually oxidize for around sixty hours. Once the leaves reach 20% moisture content they are taken to a glass house that Mr. Tang built for sun-drying. The tea is left there for a few hours each day in the morning, before the sunlight is too strong. When the leaves are dry they are placed in a large ceramic jar and aged for two weeks, which evens their flavor and dispels the grassiness that the fresh tea leaves have. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\"\u003eThe dried tea leaves maintain their recto-verso appearance: very dark green on one side, while the other side is covered in a silver fuzz that almost looks like suede. As its appearance would suggest, this tea is about texture. Its mouthfeel is smooth and pleasurable, with a soft weight that underlies its refreshing, floral qualities. For centuries, Zhenghe white tea has been processed by way of  阴干, or shade drying. The foraged tea leaves are spread out on bamboo mats and are attentively dried in the shade. It is not common for a tea to be made without any exposure to sun, fans, heat, or mechanical roasting, and the result this has on its quality is significant. Essentially, shade dried tea leaves are still “alive,” and retain the most live enzymes and nutrients as possible. This method of presenting tea is laborious, time-consuming, and requires a substantial amount of space – it is no wonder it is so uncommon.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eThis patient method results in a tea that is as nourishing as it is enjoyable. Its nutritive density and richness is offset by the delicate nature of the young leaves it is made of. The liquor coats the mouth and throat with a complex and lingering sweetness. At first we find notes of fresh soy milk, mountain herbs, and nuts.  In subsequent infusions it becomes more floral and subtly fruity; we taste bamboo, plum blossom and crimson rose. They are of the traditional Zhenghe Dabai (Big White) 政和大白 varietal, situated within thousands of acres of old growth forest, more than 3600 feet above sea level. They grew from seeds that were washed downstream from a river that runs through the middle of the forest. In these vast, old growth forests, the wild tea trees compete with a variety of other types of trees, all seeking precious, diffused sunlight. Thus, the roots of the tea trees extend deep into the earth to draw nutrients, and they grow slowly, accumulating these rich nutrients and compounds in their leaves. We feel this richness in the tea they yield. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\"\u003eMr. Fan crafts his white teas traditionally: the leaves are naturally withered and dried by sunlight, a slow and delicate process that takes between 48 and 60 hours. However simple it may sound, this method requires painstaking care and attention, along with a great deal of experience to do well. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\"\u003eThe leaves must be picked early in the morning and carefully carried down the mountain in bamboo baskets to ensure that the leaves stay intact and are not damaged as they are handled. The fresh leaves are swiftly and carefully spread out on bamboo mats, starting the process of withering. They are first withered in the sun, and their moisture level is monitored closely. When the moisture level is at 40-50% the leaves are moved indoors. Finally, when the moisture level reaches 10-20%, the leaves are gently roasted over charcoal at a very low temperature. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\"\u003eSilver Needle is considered the most precious of all white teas as it is made entirely of the fresh, single buds of the trees. Approximately 30,000 buds are needed to make 500 grams of finished tea. It takes a great relationship with the trees themselves to harvest these fresh buds before they sprout leaves. The varietal was popular for its beautiful leaves and high yield. Back then, most tea farmers either processed the leaves as pu erh and sold them as Mao Cha to bigger pu erh factories, made them into silvery green tea and sold them to Guangxi to be turned into jasmine tea, or made them into golden tips black tea.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eIn this instance Mr. Tang is doing something we have never seen before with Jinggu Big White, and we can consider him a pioneer for dedicating so many years of experimentation to achieving it. The Silver Needle is made from the leaves of the Jinggu Big White varietal – trees that Mr. Tang had planted when he first started his tiny organic tea farm 18 years ago. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eTea trees flower! – Something easy to forget, as we are always so engaged with their leaves. They blossom once every year, in November. The delicate flowers used to make this tea come from the same trees grown on Mr. Tang’s farm. They are carefully hand harvested as they bloom, and left to slowly dry in the sun, before being finished over charcoal to remove their remaining moisture; a process that takes over two weeks. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eWe will always be struck by the appearance of this tea cake: the contrast of the burnt-orange flowers pressed into the pale, silver needles. Orange peels are revered as both a medicine and a deeply satisfying flavour in China. They must be aged for at least six years before being used in tea; any younger and their moisture and sugar content will cause the tea cake to grow moldy. Once combined with the tea leaves, they are pressed together into small, cookie shaped cakes. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eNaturally aged Shoumei tends to have a subtle aftertaste of aged orange peel on its own. She firmly believes the key to our future lies in reconnecting ourselves with nature, which means living and farming in accordance with nature’s principles. Guided by this intention, Ms. Qiong adheres to natural farming methods, intervening very little with the tea she produces. She grew up watching her father and mother harvest and make tea, which was by no means unusual in her village. Eventually, in 1995, she and her family left Xiufeng and moved to the city of Fuzhou in search of better employment opportunities and more income. There, Ms. Qiong studied architecture in University and later worked as the CFO of a corporation in the coastal city, Xiamen. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\"\u003eAfter holding this position for ten years, she understood that corporate life in the metropolitan city was depleting her spirit and she had yearned for the simpler life that she and her family had felt they needed to leave behind; one that deepened connections to the land and to people. After the passing of her father, she acted on this feeling: Ms. Qiong returned to her hometown, moved back into her family’s centuries-old wooden house, and started to make tea.\u003c\/span\u003e \u003cbr\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\"\u003eThe trees in the deserted tea garden she inherited from her father are quite rare: an heirloom varietal, indigenous to the region, which were largely cut down in the 1980’s in favour of higher yield varietals with uniform leaves. It is extremely labour intensive, but it is the only way she wants to make her tea. Most of the time, she works alone, doing everything herself –  from farming and taking care of the trees, to the harvesting and crafting of the teas. The tea is dried on bamboo trays laid out in a bamboo forest under the sun. This method uses “wara,” or natural straw, and “yoshizu” (reed stem) to cover the tea plants. Although these natural coverings are very labour intensive to craft, they produce a tea of the highest quality. The natural coverings protect tea plants from the sun, while at the same allowing them to allowing air to circulate through and around them so they can breathe. He crafted this white tea for the first time in 2023, after his annual foraging trip, making something we rarely ever see from the leaves of ancient pu’erh trees.  Each year he will only produce less than 10 kilograms of this tea. \u2028\u003c\/p\u003e\n\u003cp\u003eAt 8200 feet elevation, the jungle terrain where these wild pu’erh trees stand is extremely steep, and a ways away from the nearest village. The trees have grown wild since they were planted by the ancestors of local, indigenous tribes over a thousand years ago. Unlike cultivated tea trees, wild trees only sprout once each spring, making their single bursts of life particularly precious. These leaves are in good hands with Mr. Tang, who has been crafting white tea for over 3 decades, and who understands it to be the purest of all teas due to its gentle and minimal processing.\u003c\/p\u003e\n\u003cp\u003eThe tea leaves are harvested at the beginning of spring, in late February to early March. They are processed very carefully to preserve as much of their living enzymes and vitality as possible. First, the freshly harvested leaves are spread on bamboo mats to wither, with rounds of gentle piling initiating subtle micro-fermentation. Then they dry naturally under the cool rays of the alpine sun. The dried leaves are stored in big clay jars for one month to deepen their aroma and taste. Then, in April, they are roasted over a gentle flame, using as little heat as possible, before being steam pressed into small tea cakes. \u2028\u003c\/p\u003e\n\u003cp\u003eMr. Tang gave us a sample of this wild white last year when he first released it and we were astounded by how phenomenal it looked, pressed into bright green, paper thin miniature cakes. The leaves revitalize instantly in the gaiwan, as though they were picked yesterday. They smell tropical, like dehydrated pineapple and coconut nectar, and glow with colour. Tropical notes appear on the palate as well, where we taste fresh longan and fruit peel, amidst a bouquet of roses. \u003c\/p\u003e\n\u003cp\u003eForaged in such an extreme landscape, this tea bears the markers of its wilderness, and yet, through delicate craftsmanship, reveals its gentleness, generosity, and sweetness. Mr. Tang has managed to preserve its wildness, something no cultivation could ever imitate, while producing one of the most refined teas we carry. Its energetics are stunning, like a cross between pu’erh raw and medicinal white tea. It feels both grounding and expansive, offering comfort and clarity in equal measure. This white tea, with all of its purity and unmediated presence, will remain consistent for around ten infusions.
