At roughly 600 to 700 metres elevation, the terrain here is steep and the air is cool. Gokase is one of the few places in Japan where the traditional pan-firing method of crafting tea has remained alive, even as steamed tea became the common method for crafting Japanese green teas.

Miyazaki Sabo grow and process all of their own teas and have been a pesticide-free organic farm since 1983. They produce over thirty types of tea, varying across kamairicha, oolong, black tea, and bancha, all from leaves they grow in their own tea gardens.

This organic oolong is made from spring-picked leaves that are processed in a Taiwan-inspired, lightly oxidized style. It is a blend of primarily Minamisayaka and Takachiho leaves, two Miyazaki cultivars prized for their aromatic character. The withering process draws out Minamisayaka's pronounced jasmine and gardenia-like floral notes, while Takachiho contributes a fresh, sweet character and crisp finish. Withering and light oxidation produce a particularly floral tea. The producer likens its fragrance to gardenia flowers (クチナシの花を思わせる), with their gentle and refreshing clarity.

We also find a powerful lily scent in this tea’s bouquet of aromatics. Submerged in water, the delicate leaves instantly turn bright green, appearing like a forest in the summer against their dark brown stems. As intoxicating as these aromatics are, we find the florality in this tea to be very grounded. As we drink it through infusions it doesn’t move upwards, into our heads; instead it floods the palate downwards. The liquor is gentle and extremely pretty, making this a very easy-drinking oolong that seems to soften its own edges, and in turn, ours.

Gokase lies in the Takachiho highlands, a mountainous region that covers the northwest of Miyazaki. It is crafted from the rare Kōshun (香駿) varietal, a highly aromatic Japanese cultivar known for its distinct floral and herbaceous fragrance – like jasmine, sakura and orchid – and its cool, lingering sweetness.

These leaves were harvested in 2025 and aged for 1 year before being slow roasted. The patient roasting achieves a rounder, mellower tea and adds a toasted depth that balances the varietal’s heady floral characteristics.

This oolong has a great deal of depth, but it delivers it softly. It is gently warming and very soothing. The synthesis of its floral notes and roasted sweetness gives it notes of chocolate, rambutan, and cacao shell. The impressive quality of this tea and its craftsmanship is evident in the clarity and delicateness with which it delivers such a strong profile. It remains pleasing, lovely, and increasingly herbaceous through many infusions.

Gokase lies in the Takachiho highlands, a mountainous region that covers the northwest of Miyazaki. True to this, this bancha is made from the late summer and autumn harvests of Miyazaki’s organic tea gardens.

The leaves are lightly processed, dried, and then aged for 3 years. After aging, the leaves are roasted over a wood fire in a flat iron pan (平窯, 薪火, 手炒り). The roasting is done entirely by hand so that the temperature can be continually controlled by feel. The result is a tea that is naturally low in caffeine, warming in character, and that carries the aroma of the firewood with it.

The patient and masterful processing of this bancha elevates what is usually considered an everyday tea into something very much worth savouring. It is soothing and clearing, with ashy notes and a succinct sweetness, like that of barley or buckwheat. We get some tartness on the finish, like cascara or very diluted coffee. As its roasted notes fade this tea gets sweeter through infusions, leaving our palates feeling completed and clarified. It goes without saying that this Bancha will be an excellent after-dinner tea.
