In 2009, while he was tracking boars in the mountains, he stumbled into an area dense with wild, abandoned tea trees. He was taken aback by the beauty of this discovery: to see so many tea trees, thriving on their own, at home in the ancient forest. He focuses on crafting tea from wild and semi-wild abandoned tea trees in the mountains, and his wealth is only his understanding of their location and their rhythms. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\" data-mce-style=\"font-weight: 400;\"\u003eThis tea is made from tea trees that were planted by tea farmers in the 1970’s, and then abandoned as people left the villages for coastal cities. They are of the traditional Zhenghe Dabai (Big White) 政和大白 varietal, situated within thousands of acres of old growth forest, more than 3600 feet above sea level. They grew from seeds that were washed downstream from a river that runs through the middle of the forest. In these vast, old growth forests, the wild tea trees compete with a variety of other types of trees, all seeking precious, diffused sunlight. Thus, the roots of the tea trees extend deep into the earth to draw nutrients, and they grow slowly, accumulating these rich nutrients and compounds in their leaves. We feel this richness in the tea they yield. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\" data-mce-style=\"font-weight: 400;\"\u003eMr. Fan crafts his white teas traditionally: the leaves are naturally withered and dried by sunlight, a slow and delicate process that takes between 48 and 60 hours. However simple it may sound, this method requires painstaking care and attention, along with a great deal of experience to do well. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\" data-mce-style=\"font-weight: 400;\"\u003eThe leaves must be picked early in the morning and carefully carried down the mountain in bamboo baskets to ensure that the leaves stay intact and are not damaged as they are handled. The fresh leaves are swiftly and carefully spread out on bamboo mats, starting the process of withering. They are first withered in the sun, and their moisture level is monitored closely. When the moisture level is at 40-50% the leaves are moved indoors. It is a very gentle and balancing tea that opens quickly in the glass. This Shoumei is currently the only white tea in our collection from Fuding, all of the others are from Zhenghe. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eWhite tea trees in Fuding are of the varietal Fuding Dabai (Big White), unique to this region of Fujian and well suited to its particular geography. Fuding is flanked by mountains and faces the ocean, therefore the topography is “open” and sees sustained exposure to sun, wind, and rain. Since ancient times, white tea crafted in Fuding has been withered in the high sun and slowly dried entirely outdoors. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eIt is interesting to compare this to the other Fujian source of white tea, Zhenghe, which is situated amongst the mountains where the climate changes rapidly between sun and rain. Here we see traditional craftsmanship of white tea fluctuating between drying and withering indoors and outdoors. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eWe acquired this Shoumei in 2013 and have been aging it ourselves since. There’s an old saying about white teas that goes, “3 years a medicine, 7 years a treasure.”\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eAt 11 years age, this tea is experienced as both a medicine \u003c\/span\u003e\u003ci\u003e\u003cspan style=\"font-weight: 400;\"\u003eand\u003c\/span\u003e\u003c\/i\u003e\u003cspan style=\"font-weight: 400;\"\u003e a treasure. Its taste and texture has changed dramatically over the 10 years we’ve had it. At present it smells bright and fresh, but on the palate it’s taste is mellowed and settled. The liquor and its synthesized flavour produces saliva instantly, before bringing a very compelling aftertaste, something like aged orange peel. It has long been known that, left on their own, the microbes and fungi found naturally in pu’erh raw will ferment. Without intervention this transformation from a pu’erh raw to a pu’erh ripe will take between 20 and 25 years. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\" data-mce-style=\"font-weight: 400;\"\u003eThe form of pu’erh ripe that we know today was “invented” in the 1970’s. It’s fermentation is expedited by heat and humidity, so that instead of it taking 20 years, it takes around 6-8 months for the pu’erh raw to become a pu’erh ripe.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\" data-mce-style=\"font-weight: 400;\"\u003eThe Essence of Lincang is a small batch pu’erh ripe made from leaves from 200 years old tea trees. It is made by blending two harvests: the spring harvest and the autumn harvest, which adds complexity to this tea. Generally, leaves from ancient trees are rarely used to make pu’erh ripe, and are usually made into pu’erh raw, as they are considered more valuable that way. This is something that immediately drew us to this tea. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\" data-mce-style=\"font-weight: 400;\"\u003eTo ripen it, the leaves were carefully fermented on wooden pallets, off the ground to ensure cleanliness. The temperature and humidity of the room was strictly controlled. During fermentation, the tea developed the unique aroma of sweet rice wine. The tea was then aged for six months at room temperature, before being carefully pressed into cakes.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\" style=\"font-weight: 400;\" data-mce-style=\"font-weight: 400;\"\u003eThe result is a full bodied pu’erh that is an absolute pleasure to drink, especially for its young age. It is not as deep or ‘underground’ as many pu’erh raws, offering a more nuanced experience of fermented tea. It has notes of sweet glutinous rice, moist earth and jujube dates. Its mouthfeel is smooth and satisfying; the sensation is comparable to drinking consommé — rich in texture and flavor, but with clarity and purity. Big White is an ancient varietal of tea tree, indigenous to Zhenghe, Fujian, with origins tracing back to the Song Dynasty. These wild tea trees grow deep in the forest, and sprout later in the season, in May. It is what most Zhenghe white teas are crafted from. If only the bud is picked, then the white tea would be Silver Needle. Wild White “Big” consists of the bud, leaves, and stem, and is thus considered a Shoumei. The leaves are rustic, large and full of vitality.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eWhite teas, especially a Shoumei grade, are well suited for aging, as they consist of more mature leaves and stems, which have nutrients in them that develop character with age. Hunter has compressed this Wild White into a cake to encourage the aging process. A common saying suggests that at 3 years it becomes a medicine, and at 7 years, a treasure. Some of the wild tea trees are 8 feet tall, and so the leaves are picked by villagers standing on ladders propped up against the tree trunks. The tea is made following the traditional craftsmanship of Zhenghe white tea, which involves slow, indoor drying. The entire process is done without any applied heat; it has not been sun-dried, baked, or roasted over charcoal. This white tea was naturally dried indoors for 18 days before being pressed into cakes. The cakes are beautiful to look at and turn over in your hands, displaying the tonal array of various stages of oxidation in the leaves, and the sheen that remains on them with such delicate handling. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eAs you might expect, this is a deeper white tea: we taste more earth matter, burnt sugars, and cooked fruit – all qualities evoked by time and patience. The fresh leaves were picked by a group of 40 elders from the village and transported down the mountains in bamboo baskets. The tea is made by the traditional Zhenghe method for white tea, following the principle of low intervention: it is withered by the sun and then air-dried for at least 14 days. This slow and natural drying allows the leaves to go through the full process of oxidation, gently transforming their astringent and grassy qualities to something warm, sweet and floral. Finally, the dried Shou Mei is combined with jasmine blossoms and compressed into small, 100g cakes.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eThe unique microclimate of Zhenghe County in Fujian has a wide reputation for producing the best white teas, as well as some of the most elegant and delicate jasmine flowers in China. Jasmine farms in Zhenghe grow at 1100m elevation, up in the misty mountains where the temperatures vary drastically and the soil is sandy and nutrient-scarce. These challenging conditions cause the jasmine plants to allocate more resources to survival and less to flowering. Orange peels are revered as both a medicine and a deeply satisfying flavour in China. They must be aged for at least six years before being used in tea; any younger and their moisture and sugar content will cause the tea cake to grow moldy. Zhenghe white tea is processed by way of  阴干 shade drying, as opposed to the more common sun-dried or oven-baked white teas. The foraged tea leaves are spread on bamboo mats and naturally dried in the shade, without any exposure to sun or fans or mechanical roasting.\u003cbr\u003eThis is significant—the tea leaves are allowed to dry slowly and naturally, without any application of external heat. This translates into tea leaves that are still “alive” and still retain the maximum amount of live enzymes and nutrients. The weather shifts between thunderstorms during the night, drizzles and fog in the morning, and blue sky by mid-day. Surprisingly, this ever-changing weather is the ideal condition for crafting traditional white tea. Craftsman of Zhenghe white tea, with decades of experience, can instinctively predict the changes in weather, and optimally time each stage of the tea processing to the weather. Slowly and continuously over time, the fluctuations in temperature and humidity act to “wring out” the moisture in the fresh tea leaves. Having respect for nature, learning how to work with nature, and achieving harmony between heaven, earth and human, is the philosophy for ancient crafters of tea.\u003cbr\u003e\u003cbr\u003eOur Zhenghe Wild White tea is one of the most intriguing we have tasted. The blue sky reflected in the water of the Lancang River below and, as I gained elevation, I could catch its shimmer coming through the banana and bamboo trees that lined the muddy roads. It occured to me that the mud of these narrow, tired roads was the same dark yellow colour it would have been one thousand years ago, when it was Tea Horse Road – the route used to transport tea to Tibet, Mongolia, and the emperor.\u003c\/span\u003e \u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eArriving in the village of Xigui, at 3200 ft above sea level, is like having unfolded the mountains to discover a secret they’ve been conspiring with the clouds to keep. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eOur Xigui comes from the family of Zhang Tianwen, who have been inhabitants of these mountains for generations. In Yunnan, the leaves of ancient arbor trees are almost exclusively used to make pu’erh raw, as they fetch a much higher price. It is very unusual practice to craft a ripe tea from them. The artisan, Zhang Tianwen’s, intention was to make a pu’erh ripe using leaves from arbor trees, crafted and fermented with traditional techniques, precisely because such a tea did not exist in the market. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eThis pu’erh was fermented for 6 months in small batches, and then aged for 9 months. Firstly, they contain enzymes that catalyze the breakdown of proteins in tea leaves, turning them into sugars, thus making the tea taste sweeter and more smooth. On account of the extra sunlight they receive, Purple Bud trees contain significantly higher anthocyanin in their developing leaves than other varietals. In 2006, Tang Wang decided to take a break from his corporate job in the big city, Kunming. He rented a small place in rural Yunnan, where his only intentions were to read, reflect, and drink tea with friends. In one of these unpurposed conversations an old friend, Li, suggested that Tang grow tea in his hometown, Yangta Village. That July the two of them traveled to Jinggu in Yangta and leased 11 acres of forested area from Li’s niece. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\"\u003eMr. Tang had never grown or made tea prior to 2006. The density of this tea makes the withering process particularly long, usually happening over the course of a week. The slowness with which the tea withers means that the active enzymes in the leaves undergo gradual oxidation and hydrolysis without being damaged. Once the leaves are between 80 and 90 percent dry the leaves are roasted over charcoal for 6 hours. He had rented a small place in rural Yunnan where his only intentions were to read, reflect, and drink tea with friends. In one of these conversations an old friend, Li, suggested that Tang grow tea in Li’s hometown, Yangta Village. That July the two of them traveled to Jinggu in Yangta and leased 11 acres of forested area from Li’s niece. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eThe area they leased was wild growth, at about 6500 ft elevation. This is where they would eventually plant 70,000 Jinggu Big White tea trees. Tang also leased another tea garden in the mountain that locals had shown him; a highly regarded area that was home to ancient pu’erh trees. And so, while he waited for his Jinggu Big Whites, Tang began making pu’erh from these very old trees. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eWe visited Tang’s tea estate in April 2019 and Tang took us on the steep hike to see his pu-erh tea garden. I spent several hours there, observing the graceful and efficient way that the elders harvested the tea leaves, studying the trunk structures of the ancient trees, and admiring the vibrant mosses that had grown on them. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eFor Mr. Tang, crafting beautiful teas from a clean and balanced ecosystem is sacred. He is deeply dedicated to the craft of traditional tea making; this philosophy guides everything he does, and is embedded in every single tea he makes. Alongside being an expression of this special ecosystem, his teas are so distinctly peaceful, and feel extremely clear, just as he feels as a person. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eWe have been asking Mr. Tang for a pu’erh ripe for many years, but making this fermented tea requires a production facility where the humidity and temperature can be controlled. Mr. Tang did not have access to a facility like this until very recently. In 2017, his good friend Qing Shui invited him to select some of his clean and high quality pu’erh raw to ferment into Pu’erh Ripe at the Jinggu Tea Factory. Mr. Tang used the leaves of 100 year old tea trees from Jinggu and blended them with tea leaves from Bulang Mountain. His thought was to combine the roundness  and sweetness of old tea trees from Jinggu with the depth and intensity of tea from Bulang Mountain.  \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eThe tea leaves were harvested in the Spring of 2017 and fermentation started later that year, lasting for 6 months. The tea was then air-dried and aged until 2020 before being pressed into cakes. Mr. Tang named his first pu’erh ripe “Shu Zi,” a phrase taken from the philosophical works of the ancient Chinese philosopher, Chuang Tzu (Zhuang Zi). The name translates directly as  “\u003c\/span\u003e\u003ci data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003ewith deep plowing and careful and repeated weeding of the seed, my harvests were rich and abundant.\u003c\/span\u003e\u003c\/i\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003e” A sentiment that resonated with Mr. Tang’s approach to farming and crafting tea over the last decade: meticulously, fastidiously, and honestly. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eThis is one of our favourite pu’erh ripes. The leaves are combined with aged orange peel (Chen Pi) from red mandarin oranges grown in Xinhui, Guangdong, (the most well-known village for producing aged orange peel). \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eOrange peels are revered as both a medicine and a deeply satisfying flavour in China. They must be aged for at least six years before being used in tea; any younger and their moisture and sugar content will cause the tea cake to grow moldy. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eThe orange peel in this tea, now 20 years old, is gently aromatic, and deeply ingrained in the tea it has been pressed with. The experience of drinking this pu'erh ripe is mellow and sweet, sustaining its balanced flavour through many infusions – an indication of its quality. Its liquor remains very red and has a clean, succinct aftertaste. The tea was crafted in the spring of 2010, and then aged in an underground cave for 10 years. We purchased it when it was released from the cave in 2020, and have been aging it ourselves for the last 3 years. \u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\" data-mce-style=\"font-weight: 400;\"\u003eBrewing it now, we are quite astounded by the quality of this Liu Bao. Aged this long, dried orange peel is considered a medicinal substance on its own, and carries many benefits to the body. The flavour also becomes full and concentrated over time.
