Tea & Sweets with Jiwon Seo

We are excited to present a Tea & Sweets event with our dear friend, Jiwon Seo.

We have always enjoyed Jiwon’s menus, while she was chef at Bar Gobo and with her various pop up events around Vancouver. Her desserts are playful, refined, always incorporate Korean ingredients, and we appreciate them for never being too sweet, or too complicated.  

Although Jiwon studied French and Italian cooking, she is aware that using Korean ingredients in her cooking allows her to represent who she is, engage with what her palate knows best, and is ultimately how she finds her own language of food.

We are inspired by her approach towards creating something new, and find parallels in it with how Cultivate aspires to stay true to various traditions while forging its own authentic character.

We will start this two course pairing with a tasting of 3 petit four that showcase common Korean ingredients: mugwort blondie, buckwheat profiterole and goguma (korean sweet potato) pate. These treats will be paired with a tea for the fall season, Charcoal Roasted Oolong. 

The second course is black sesame cake with black sesame cream, finished with soy sauce caramel. We are pairing this deeply flavourful dessert with our new Black Oolong, a delicious hybrid tea that has the comforting, roastiness of an oolong, but finishes with the sweetness of a black tea. 

For those interested in trying something very special, we will offer guests the option of upgrading their tea pairings to a Rare Tea we’ve just released, “Dinosaur Egg” Oolong. This is an exceptional tea, made in very limited quantities, that we are honoured to be able to share with you.
