Yame is a special place. It is defined by dramatic mountains and cascading waterfalls. It is also known to produce the best Gyokuro in Japan, making it home to the traditional craftsmanship for this kind of tea. Over 100 years of experience making Gyokuro lives in Yame and thus, the tea that comes from here has set the standard for Gyokuro around the world for a very long time.
This is an exquisite, ‘special occasions’ gyokuro, crafted primarily from the saemidori varietal. Its liquor is a unique blueish, aquamarine hue, suggesting its otherworldly qualities. The scent of the dry tea is subtle, singular, and does not invite reference to other things.
The first thing we notice about the taste of this tea is how rich and reduced it feels, like a dashi broth that has been on the stove forever. The umami and nutritive characteristics are delivered in a spherical suspension, making it feel incredibly balanced and lux. This gyokuro certainly has a commanding, and slightly confounding, presence. By the third infusion its perfume comes out, and we are left to pleasantly wonder what exactly we just had in our mouth.
