This oolong is from a small, high altitude tea farm in the towering Alishan Mountain range in Taiwan. The varietal is indigenous to the area, and favours the cool climate of the mountains. The high altitude of the farm means the tea trees are covered in cloud and mist all year round, producing a tea that is vibrant, full bodied and sweet.
This is a fresh winter harvest of Alishan High Mountain. The first infusion reveals a beautiful balance between sweet and savoury notes, woven together by warm and intriguing spice notes. We find cinnamon, clove, and cardamom, complimented by that notorious alpine sensation that creates tingles at the back of the palate. The robust, wakame-like leaves reanimate beautifully, revealing their impressive stems and structure as they unfurl through infusions. Eventually, it is as though an entire tea tree has bloomed in the gaiwan.
The integrated profile of this elegant oolong reminds us of lilies and rainwater.
