We consider this an experimental tea, as it is highly unusual to see Shuixian leaves crafted into anything other than oolong. White tea processing is so minimal and gentle, with this tea it is as though we taste the Shuixian varietal undressed, without any of the characteristics imparted by roasting.

These semi-wild trees grow in a dense, protected forest, where they were discovered by Mei on a foraging trip. The grove was planted in the 1970's, and has been growing untended in the mountains for over 20 years.

The first thing we notice when drinking this tea is its unique mouthfeel: it is oily and grassy from the oolong varietal, yet has the refreshing sweetness and evenness of a white tea. The weight of the liquor is persistent, carrying a heady floral quality with it. It has a vanilla flavour on the finish that, combined with its sundried sweetness, approaches tasting like birthday cake. This chance encounter with an undressed Shuixian is certainly some kind of celebration.
